Why this plate earns its place
The 100mm Aurora in Lapis sits between the amuse-plate 75mm and the larger tasting-course 165mm, making it the most versatile size in the range. It's substantial enough to be a real plate—a side dish, a palette-cleanser, a small dessert, or a sauced garnish—yet small enough to feel intentional rather than half-hearted. Each tray is fired from alumina vitrified ceramic, engineered to handle thermal shock, aggressive dishwashing, and the cumulative stress of high-volume professional kitchens.
Lapis blue is a colour choice: professional without being boring, distinctive without being decorative. It works across tasting menus and fine-dining table services, and it reads equally well for a single carefully composed side dish as it does for a parade of small courses. The glaze is formulated to resist staining, moisture absorption, and colour fade—so the Lapis will hold its depth through years of service.
The nesting design is practical for the pass: a 12-pack stacks compactly, yet each tray is rigid and stackable even when loaded. For kitchens running multiple small plates (a course of vegetables here, a protein component there, a garnish there), having a dedicated set of Lapis 100mm trays in ready reach keeps the pass organized and the plating flowing. And they're light enough to handle all night but substantial enough to feel like tableware, not canteen ware.
