Why this chemical earns its place

This is Winterhalter's A7 5 LS descaler powder in a case of twelve 1 kg units, from the Winterhalter warewashing chemical range. Descaling is the maintenance job that keeps a machine performing as it did when it was commissioned: every wash cycle leaves a little hardness behind, and it builds on the boiler element, the wash and rinse arms and the internal pipework where nobody sees it until the results change.

The symptoms arrive in order. Glassware comes out with a film on it, plates lose their shine, the machine takes longer to come up to temperature between cycles, and eventually the element works harder than it should for the same result. Descaling on a set interval rather than in response to complaints is what keeps a warewasher off the service schedule, and a twelve-unit case is sized for a kitchen that has made that a standing job rather than a call-out. How often it is needed comes down to local water hardness and how many racks a day the machine puts through — a hard-water site running back-to-back covers will get through it far faster than a soft-water kitchen washing twice a day.

It depends on water hardness and throughput. Hard-water sites running heavy volumes need it far more often than soft-water kitchens on light use — set an interval that suits your water and stick to it rather than waiting for results to drop off.

Filmed or cloudy glassware, dull plates and longer recovery between cycles are the usual signs, and by then scale is already on the element.
