Why this product earns its place
Seasoning from above only ever seasons the top. Whatever is sitting underneath comes out plain, which is why one portion tastes right and the next one tastes of nothing when a section is busy and nobody has time to turn a batch over. A shaker basket fixes that with the same amount of seasoning and less effort — the food moves against itself, everything gets coated, and the batch comes out consistent instead of graded from top to bottom.
It works best sitting within a step of where the plating happens, so a batch goes in, gets shaken and goes straight out without crossing the kitchen. That also keeps the seasoning step in one place when several plates are leaving together, rather than at the pass over finished food. Wash it with the service kit at the end of each session: salt and grease build up in a basket far faster than on a flat surface, so it is a daily job rather than something that waits for the weekly clean.
