Why this tray earns its place
The Fusion Buffet system from Steelite and D.W. Haber & Son is built for caterers, hotels, and restaurants that need to keep food fresh at front-of-house without plugging in a fridge. These GN 1/2 porcelain trays are the display component — the place where your prepared dishes sit, held cold by the integrated Ice Cell blocks underneath.
Porcelain is the material of choice here. It won't retain condensation like plastic, it looks professional at the table, and it's durable enough to handle the temperature swings from service to service. Each tray measures 290mm wide, 350mm deep, and sits just 50mm high — shallow enough that plates stacked on top stay accessible, tall enough to hold garnish and liquid without spilling.
You get two trays in the pack, which means you can swap them out — one goes out hot, the other gets refilled and brought to temperature. They stack neatly when not in use, and the system's clever modular design means you can mix and match sizes, risers, and finishes to match your setup. The whole point of the Fusion Buffet is that it looks intentional, not improvised.
