Why this tong earns its place
Colour-coded handles work for the same reason coded boards do: nobody has to remember which tong came off which section, they can see it across the room. Brown is the vegetable colour on the standard UK chart, so a brown handle marks this tong as belonging to veg prep and hanging back on the veg rack. Thirty centimetres is the reach length. It keeps a hand clear of a deep pot of blanching water or the back of a hot pass, and gives enough leverage to lift a full portion in one movement instead of two — the trade is finesse, so this is a lifting and turning tong rather than a plating one.
The handle is textured and non-slip, and that matters most at the fifth hour of a service, when hands are wet out of a colander or greasy off the pass: the grip comes from the texture rather than from squeezing harder, which is what stops a tong rolling in the palm under load. The body is stainless, so it cleans back to bare metal and carries nothing over from the last job. Treat the handle as the part to protect — keep it off a live burner, don't leave the tongs resting in a pan over heat, and wash and dry them at the end of service rather than leaving them to soak.
