Why this spatula earns its place
A spoon spatula sits between a spoon and a scraper. The head is dished rather than flat, so it holds enough to move product around a bowl, and it still carries an edge that clears the wall on the way past. At 25 cm this is a hand tool — the length you reach for standing over a mixing bowl, a saucepan or a prep tub, folding a filling together, working a dressing, turning a cold mix without leaving half of it stuck to the sides.
The rubber head is what makes it worth having over a spoon. It flexes against a curved bowl and takes the last of the mix with it, which on a costed batch is the difference between yield and waste. White is the traditional colour for a scraper and it earns its place in service: staining and wear show plainly on a white head, so it is obvious when one has done its time. Wash the joint where the head meets the handle as carefully as the head itself, and take it out of the utensil pot once the edge is nicked or the head has gone slack.
