Why this spatula earns its place

A spatula earns its place by getting everything out of the pan. Scraping down a sauce, folding a mix, turning something delicate, emptying a bowl so nothing is left clinging to the sides — it is the tool that does the last ten per cent of every job, and the one most likely to be reached for mid-service. At 40 cm it is a long-handled tool rather than a bench utensil, which puts the hand well back from the heat when working in a deep pot or across a hot flat top.

The 260 °C rating is the number that matters. A silicone tool that softens or takes a mark at frying temperature becomes a nuisance within a week; rated to 260 °C, this one can stay in contact with a hot pan surface, stir a roux as it takes colour, or scrape out a pan straight off the burner without deforming. Silicone also flexes to the curve of a pan wall, so it clears the shoulder where a rigid tool skips, and it will not score a coated surface the way a metal turner does.

Being dishwasher safe is what keeps it clean in practice. A utensil that has to be set aside for hand-washing gets a rinse and goes back on the rack; one that goes through the passthrough with everything else gets washed properly every time. Red makes it easy to pick out of a full utensil pot and easy to allocate to one section, so the tool that has been in a hot pan of sauce all night is not the one that turns up somewhere it should not be.
