Why this spatula earns its place
The E4213 is a turner for the cooking that happens in a deep vessel rather than a sauté pan. Its 97 cm handle puts the cook's hands clear of the pan rim and the heat rising off it, while still leaving the blade close enough to feel what it is doing — the point at which a long utensil stops being a lever and starts being controllable again. The 12.5 cm blade is sized to take a whole portion on its face instead of splitting it.
Perforation is what separates this from a solid blade. Stock, water or frying oil falls back through the holes as the food comes up, so portions leave the pan drained rather than dripping across the range, and the blade meets less resistance being drawn through a full pan. The stainless steel handle is what makes the length usable — a loaded blade on a long handle puts the whole strain on the joint, and steel takes it. The polypropylene blade keeps a metal edge off lined and coated cooking surfaces; as with any plastic utensil, it works in the hand rather than parked against a hot pan wall.
