Why this skimmer earns its place

A 9-inch spider lifter is the workhorse tool for high-volume frying. This Vogue model has a 225 mm diameter basket — large enough to lift substantial batches of chips, battered items, or doughnuts without needing multiple runs, yet small enough to fit comfortably in standard deep fryers. The 740 mm handle keeps your hands safely away from hot oil while giving full reach into deep equipment.

The basket is crafted from nickel steel with tinned wire construction — this isn't decorative tinning. The tin layer protects the steel from oil degradation and salt corrosion that would otherwise weaken the tool over time. A spider that starts solid will still be solid five years later because the tinning does the job it's supposed to do: preserve the wire.

Heavy-duty describes both the build and the reality. You'll use this tool dozens of times per shift, from opening service through closing — fishing out golden batches, draining excess oil back into the fryer, moving items to resting plates. It needs to survive repeated contact with hot fat and the handling abuse of a busy kitchen. This one does.

Questions, answered straight

The 9-inch has a 225 mm basket diameter versus the 8-inch's 199 mm — that's a meaningful difference when you're lifting batches. Choose 9-inch for high-volume work, 8-inch if your fryer is smaller or you prefer more control on individual items.

Tinning is a protective layer that stops the steel wire from oxidising and weakening in hot oil. Without it, the wire gradually corrodes and the basket becomes fragile. With tinning, the basket stays strong for years.

Not recommended — resting the basket in a hot fryer for extended periods can damage the tinning and weaken the wire. Hang or store the spider separately between shifts.

Soak in hot soapy water to soften oil residue, then scrub gently with a brush. Don't use caustic degreasers that can attack the tinning. Dry thoroughly to prevent water spots on the wire.

Yes — nickel steel with tinned wire is rated for professional deep fryer temperatures (around 190°C). It won't fail or degrade in standard commercial equipment.
