Why this skimmer earns its place
A fat skimmer is built specifically for one job: keeping frying oil usable longer. The square bowl (200mm edges) and raised sides contain the oil—you're not losing it back into the fryer when you lift. Unlike a round skimmer designed for stocks, this one has geometry that works with viscous, hot oil.
At 660mm long, you're working at a safe distance from the fryer heat. The raised edges do the work—they trap debris and foam against the bowl sides, so you pull up more oil and less air. Stainless steel takes the heat and the acidic oxidation that comes with frying day after day. At 4.8kg, it's lighter than a stock skimmer and nimble enough for rapid-fire straining between batches.
