Why this potato peeler earns its place
Ten kilos a batch is the number to think in. That is the unit of work this machine deals in, and it is the point at which hand peeling stops making sense: a kitchen putting out a few hundred covers of roast potatoes, chips or mash is spending a person's morning on a job a machine does while that person does something else. Load it, run it, come back. The labour saved is the argument, not the peeling itself.
Being freestanding matters more than it sounds. The machine stands on its own in the prep area at working height, so it costs you floor space rather than bench space, and nobody has to clear a run of worktop to use it. It loads from standing and it stays put, which suits a prep room where different people come to it through the day rather than one person owning it. Sirman have been designing and building in Italy for the commercial market, and a peeler is a machine that earns its keep by starting every morning without a fuss.
