THE WORKING VIEW

Why this rolling pin earns its place

Length is what separates a working pin from a domestic one. At 510 mm this covers a full sheet of pastry in a single pass rather than making you roll it out in overlapping strips, which is where uneven thickness creeps in and where a tart case ends up thin in the middle and thick at the edge. The 45 mm diameter is on the slim side, and that is deliberate — a narrow pin gives more control over how much dough moves with each stroke, and it lets you feel the thickness through your hands instead of guessing at it. That combination suits pastry, pasta sheets, pizza bases and biscuit dough more than it suits heavy bread work.

Polyethylene is the reason this pin survives a commercial routine. Timber pins have to be kept dry, oiled occasionally and never soaked, because water gets into the grain, raises it and eventually splits it. A polyethylene pin has no grain to raise, does not absorb fat or the smell of what it last rolled, and takes repeated washing without deteriorating. In practice that means it goes back to a visibly clean surface after every batch rather than accumulating a film of old flour and butter, which matters more on a pastry section running several different doughs through a shift than it does anywhere else.
