Why this pastry brush earns its place
The E7644 is a flat pastry brush for laying glaze, wash and cool liquid onto food before or after it meets heat. At 75 mm across, the head covers ground fast — a tart border, a tray of buns or a run of pastries goes over in a handful of passes rather than a dozen, which is the difference between a bake going in on time and a tray sitting on the bench getting warm.
A flat head lays a thin even film rather than pooling liquid in one spot, and the width lets the brush follow a straight edge without wandering. Polyester bristle is the usual choice on a commercial pastry section because it holds its shape when wet and there are no natural fibres to work loose into the food. Lockhart rates the brush for cool sauces, glazes and liquids — this is a finishing and prep tool, not something to leave standing in hot fat.
The handle is polypropylene, so it stays light in the hand and does not soak up glaze, oil or the smell of whatever it was last used on. Red runs through the brush as its colour code, which lets a kitchen tie it to one task or one station under its own scheme and see from across the bench whether the right brush is in the right hand.
