Why this pastry brush earns its place
The E7642 is a narrow flat pastry brush for detail work — glazing individual tartlets and canapés, running a wash along a pastry seam, brushing between layers, dressing the edge of a piece rather than the whole of it. At 25 mm the head goes where a wide brush cannot follow, and it puts glaze exactly where it is wanted instead of across the tray around it.
That control matters twice over on an expensive glaze. A narrow head carries less liquid per pass, so the coat goes on thin and even and very little of it ends up on the paper. Polyester bristle is the standard on a pastry section because it keeps its shape wet and there are no natural fibres to work loose into the food. Lockhart rates the brush for cool sauces, glazes and liquids — egg wash, syrup, cold marinade — rather than anything hot.
The handle is polypropylene: light, non-absorbent, and easy to keep hold of through fiddly work where the brush is being turned in the fingers rather than swept. Red runs through the brush as its colour code, so a kitchen can tie it to a single task or section under its own scheme and see at a glance that the right brush is in the right hand.
