The G48 is all-purpose as stated, but it's most at home with vegetables that benefit from its thin blade and flute geometry—daikon, cucumber, soft squash, herbs. It will handle harder work like carrots and beets, but a heavier European chef's knife may suit high-volume vegetable prep better. Test it in your workflow first.

Santokus are shorter, lighter and sharper, designed for push-and-slice motion rather than rocking. They excel at clean vegetable and fish work but don't break down joints or handle heavy chopping as well as a chef's knife. If your team uses both techniques, you'll likely need both knives.

Molybdenum-Vanadium stainless steel resists rust well, but it's not stainless in the high-alloy sense. In very humid kitchens or if left wet, surface spotting can occur. Regular hand-washing and drying prevents this entirely. Avoid prolonged contact with acidic foods (lemon, vinegar) without rinsing.

Most cooks adjust in a shift or two once they understand the Santoku's lighter touch and push-and-pull technique. The shorter length and balance make it feel more natural to some people immediately. Budget a brief induction, but expect fast adoption if your team is open to it.
