A: Best practice is 5–10 strokes before each shift, or whenever you notice the blade dragging slightly on prep work. A few seconds with the steel maintains edge between formal sharpenings, which might only happen monthly or quarterly depending on volume.

A: Yes — it's suitable for chef's knives, carving blades, slicers, and most straight-edge professional knives. The 30.5cm length accommodates full-length blades up to about 35cm. For serrated knives, a different tool is needed.

A: A steel realigns the microscopic edge of a blade without removing much metal — quick and frequent. Sharpening removes metal to rebuild a rounded or damaged edge — less frequent, usually done by a specialist. The steel keeps your knives in the honing zone so you sharpen less often.
