THE WORKING VIEW

Why this table knive earns its place

The Lazzo design is pure commercial restraint: there's nothing ornate here, just the geometry that works. The teardrop handle tapers beautifully to the blade, weighted and balanced so the knife does the work, not your hand. Built from 4mm-gauge 18/10 stainless steel, it's the kind of piece that feels expensive because it is—premium, heavy, built to last through years of commercial service.

Sold in dozens because restaurants, hotels and catering operations need cutlery that can take a beating. High-temperature wash cycles, intensive use, constant restocking—Lazzo stands up to it all. The solid handle is a design choice: heavier than hollow, which means better balance and zero flexibility. If you're running table service where diners notice what they're holding, this is the knife.

Dishwasher safe, obviously. 242mm overall length. The weight and feel are what make the difference—this is tableware that carries the kitchen's reputation into the dining room.

BEFORE YOU BUY

Questions, answered straight

Yes. That's the premium grade—18% chromium, 10% nickel. You'll see cheaper cutlery in 18/0 or 13/0; the difference is in durability and how it handles acidic foods without staining or pitting.

Weight and balance. A solid handle gives you a knife that feels substantial in the hand and performs better—no flex, no rattling. Commercial kitchens prefer it for the same reason: reliability.

Designed for commercial dishwasher cycles, which are far hotter and faster than domestic. The 4mm gauge and 18/10 material mean these will outlast most restaurant operations.

The Lazzo range comes in knives, forks and spoons, all 18/10 with the same teardrop handle design. If you're mixing brands, bear in mind that diners notice when flatware doesn't match.

Chef & Sommelier makes Lazzo across the full range, and it's a standard commercial line. As long as you're ordering from a catering supplier, replacements are straightforward. For specific queries, ring Craven Cooling on 01792 732702.
