THE WORKING VIEW

Why this dessert knive earns its place

The Metropole collection refuses the generic. These dessert knives carry the urban-inspired geometry—long, slender lines, stylish sloping handle—into the precise moment where it belongs: the transition between the main course and the final course. At 220 mm, they're sized for dessert service: shorter than a table knife, lighter in the hand, appropriate to the task.

Crafted from 18/10 stainless steel (18% chromium, 10% nickel—the professional standard), they offer the durability venues need when turning tables multiple times a night. The black finish is PVD-coated stainless: a surface-hardening process that bonds to the steel rather than sitting on top. It resists staining, discoloration, and the gradual dulling that plating experiences. Amefa's 500-times-polishing process ensures the finish catches light evenly, maintaining that "just new" appearance through hundreds of dishwashing cycles.

The blade profile is suited to its purpose: cutting through soft pastries, cakes, and fruit without requiring the substance of a main-course knife. The weight is balanced for comfort; the edge remains sharp enough for its task when properly maintained. For restaurants serving multi-course meals, hotels updating their dessert service, and catering operations that treat the final course as part of the experience, these knives are the detail that guests notice and servers trust.

BEFORE YOU BUY

Questions, answered straight

This is a dessert knife—one size smaller than a table knife (220 mm vs 245 mm). It's suited to cakes, pastries, soft fruits, and sweet courses. A fish knife is wider-bladed and longer (often 215 mm but more blade width); these are narrower and lighter. If you're running full silver service, you'd have table knives for mains, dessert knives for sweets.

Sequence matters. When guests see the table set with course-specific cutlery, it signals formality and care. Dessert knives also feel right in the hand—lighter, quicker, appropriate to the task. For casual service, a small table knife works fine; for multi-course dining, dedicated dessert cutlery is industry standard.

The PVD coating is hard and scratch-resistant. You won't damage it through normal service. Fine scratches will accumulate over years in heavy use—that's cosmetic wear, not structural failure. The underlying stainless steel resists pitting and corrosion regardless of the finish state.

Under commercial dishwashing (spray cycle, no soak), the PVD coating is designed for thousands of cycles. After 3–5 years in a busy kitchen, cosmetic wear becomes visible (slight dulling, fine scratches). Functional life is longer; most venues cycle cutlery for aesthetic reasons.

No special care required. Commercial dishwashing is their design environment. If hand-washing, dry immediately. Don't soak long-term in chlorinated detergent, which can gradually dull (not damage) the finish. Store flat or in standard cutlery baskets—they're durable enough for the rigours of any service.
