Beech wood is the traditional choice because its grain structure accepts the blade cleanly and recovers, keeping your knife edges sharp far longer than plastic alternatives. That's not sentiment; it's physics every chef notices.

Beech's fine, even grain does something plastic cannot: it naturally inhibits bacterial growth. Your knife makes contact with wood that resists the staining and deep scoring that trap contamination. The dense cellular structure means the surface stays smooth under heavy use, not bruised and splintered like budget plastic boards. After prep, a rinse and wipe leave it truly clean—not just clean-looking.

At 380×305mm and under 1.2kg, this board handles the daily rhythm. Finger grooves cut into one edge grip securely even when wet. The timber needs hand washing (machine dishwashers can split beech), and occasional conditioning with food-grade mineral oil keeps it supple. Questions, answered straight

A: The medium is 380×305mm (about 15×12 inches), the large is 510×355mm (20×14 inches). Medium fits tighter spaces and handles everyday prep; large is for high-volume work or whole-bird butchery. Both are beech.

A: Beech compresses under your knife and recovers—plastic resists briefly then bruises permanently. You'll see sharper blades and cleaner surfaces after a few weeks of side-by-side use.

A: Hand wash with hot water and soap, stand upright to dry. Every month or two, rub it with food-grade mineral oil to keep the wood from drying out. That's it.

A: Beech resists staining better than most boards, but deep-coloured vegetables (beetroot, etc.) can leave marks. Lemon juice and salt will lift fresh stains. Long-term marks are cosmetic—the surface is still food-safe and functional.

A: Not recommended. Machine heat can split the wood and shorten its life. Hand washing takes two minutes and keeps it in service for years.
