Why this chopping board earns its place
Green is the salad and fruit board, and it sits at the sharp end of the colour code because most of what is cut on it will be served without a further cook step. That is the whole reason a coded board exists — a commis reaching for green at the prep bench does not need to ask what the board last handled. At 458 × 306 mm there is room to break down a full tray of leaf or fruit in one go, with the trim staying on the board instead of spreading across the table.
The integrated grips are what make the board easy to keep honest through a shift. Prepara frame them as a cross-contamination measure, and that is exactly how they behave in use: the board is lifted and carried by a moulded grip rather than by the cutting face, so nobody's hands are on the surface that ready-to-eat produce sits on. It also makes a wet, loaded board straightforward to move one-handed to the wash-up.
Polypropylene is non-porous and does not stain readily from fruit acids or juices, and at 12 mm the board holds flat under a knife rather than flexing. It is also easier on a blade than glass or a hard composite, so a prep knife stays usable through a long session of fine work. Wash it properly after each session, stand it on edge so both faces dry, and take the board out of service once the scoring is deep enough to hold soil through a wash or it has cupped and rocks on the bench.
