Why this chopping board earns its place
Brown is the vegetable board under the colour scheme UK kitchens work to, and it is usually the board with the most hours on it. Veg prep is volume work: it starts before service and comes back between them, and it happens alongside every other kind of prep on the same bench. The colour is what keeps it in its own lane — no one has to be told which board to reach for, they just have to see it.
At 460 × 300 mm this is a station board rather than a bench-length one. It sits in a single working position with a bowl on one side and a bin on the other without swallowing the whole run, and it is light enough to pick up and tip a board of diced veg straight into the pot rather than scraping it across the bench in stages. The 12 mm thickness gives it enough body to sit flat and stay put through repetitive knife work, where a thin board would creep. Polyethylene takes those cuts without turning the edge, and the scoring it accumulates is what eventually retires it — once the cuts are deep enough to catch a fingernail, the surface has stopped cleaning back properly.
