High-density polyethylene is the long-term choice. Harder, more rigid, and more durable than low-density boards, HDPE resists wear better over years of commercial prep work. If your kitchen runs light- to medium-volume prep, or if you need boards that will genuinely age well, high-density is the better economics over time.
