THE WORKING VIEW

Why this box earns its place

What a guest reads as a well-dressed buffet is mostly just dishes held at different heights, and this is the block that holds the highest of them. It is the 1/6 rectangular format — 212 x 199 mm on the counter, compact enough to drop into a run between larger pieces rather than set the shape of the table.

At 120 mm it is the tall block, and tall means the back row. Set at the far edge of a table it brings rear dishes up towards eye level rather than losing them behind the front row, which is what keeps people reading a display all the way along instead of stopping halfway. It is also the top step of a tiered run. Because it stacks, the height is set during setup and taken back down as the table clears through service.

The dark brown finish is the one that flatters plated food. Deep-toned oak drops back under lighting and lets white porcelain, breads and cured meats hold every bit of the contrast, which is why it lands in evening service and darker, panelled rooms rather than bright breakfast spaces. Ribbed sides run a line of shadow down the length — worth more on a tall block, where flat timber would read as a plain slab across a room — and give the hands a grip when a dressed block is moved.

Questions, answered straight

212 x 199 x 120 mm. The 212 x 199 mm footprint is the 1/6 rectangular size in the Podium modular sizing, so blocks line up cleanly along a counter run.

The back of a display, or the top step of a tiered run. It lifts rear dishes towards eye level so they stay visible over whatever sits in front of them.

No — at the near edge it blocks the view through to the rest of the display. Tall blocks are built from the back forward, with the shallow steps at the front.

212 x 199 mm. The footprint is the same at every height, so a tall block takes no more table than a shallow one.

By hand: a cloth, a food-safe cleaner, then dried off straight away rather than left with moisture sitting on the grain. Wooden service pieces should not be soaked.

It is a flat-based rectangular block, square on a level counter. Height raises the centre of gravity, so centre the weight over the footprint and stack squarely — that is what holds a tall dressed display through a service.
