Why this bar mat earns its place
A bar mat earns its place by keeping the counter it sits on dry. This one runs 700 mm, so it covers the length of a pour station rather than one tap or one glass position — the over-pour, the shake of a bottle neck and the water sweating off anything that has come out of a fridge all collect on the mat. The 100 mm depth is deliberately narrow: it takes the wet front edge of the bar where glasses are filled, and leaves the space behind it clear for building drinks and setting down a tray.
Rubber gives the mat both the weight to stay put and the grip underneath to resist creeping across a wet counter, which is what separates a working mat from something that shifts every time a glass lands on it. Black is the finish that ages best on a bar — coffee, cola, red wine and bitters all mark, and a dark mat carries that far better through a week of service than a light one. It also reads as part of the bar rather than an accessory, which matters on a counter guests can see. Lift the strip out at changeover, rinse it at the sink, and wipe and dry the counter underneath before it goes back down.
