Vogue's polycarbonate is rated for the full professional temperature span: −40 °C in the blast freezer through +100 °C in a bain-marie or microwave, with no cracking, crazing or chemical leaching. At 120 grams it's half the weight of a stainless equivalent, cutting prep fatigue and making overhead storage safer. The material is BPA-free, NSF-listed and meets EU food-contact standards (EC 1935/2004), so it's cleared for every station from cold prep to hot holding.
The smooth, non-porous interior releases sticky glazes, marinades and pastry creams with a rinse or a single dishwasher cycle — pans are designed to drip-dry fast, keeping turnover high.
