Why this gastronorm earns its place
A 1/3 gastronorm pan is the workhorse size — wide enough for a proper batch of roasted vegetables or a full service of lasagne portions, deep enough at 150 mm to hold a generous lager of soup or stew. This one is moulded from polycarbonate, which means it shrugs off the knocks that shatter polycarbonate's cheaper cousins. Drop it on a quarry-tile floor and it bounces; run it through a conveyor dishwasher at 85 °C and it comes out clean, dry and dimensionally unchanged.
The temperature range is the real workhorse spec: –40 °C to +100 °C. That covers blast-freezer storage straight through to a rolling boil in a combi-steamer, so the same pan can go from prep-day batch-cook into the freezer, then straight into regeneration without a decant step. The material stays cool to the touch even at the top end, which matters when you're pulling pans from a steam cabinet during a busy cover. Vogue moulds the corners with a generous radius, so there are no sharp internal angles to trap sauce or protein — a quick blast under the spray arm and it's done.
At 460 grams empty it's light enough to stack five-high on a trolley without tipping the load limit, yet rigid enough not to bow when full. The black colour isn't just aesthetic; in a busy pass it hides the inevitable scuff marks that make clear pans look tired after a month. Standard GN 1/3 footprint means it drops into any combi rack, prep table well or heated gantry without faff. Lids (sold separately) snap on tight for transport or cold storage, and the whole system is designed to drip-dry upside down on a rack — no tea-towel polishing required.
