Why this accessory earns its place

A 1/3 pan is built for counter service and smaller kitchens. Two moulds per tray means you're working in pairs — standard for an omelette station or small breakfast prep where speed beats volume. The mould cavities are the same shape and depth as Rational's larger units, so if you graduate to high-volume service later, the cooking technique stays the same.

The smaller footprint sits comfortably in front-line prep stations. A café can have one tray cooling whilst another cooks, without hogging counter space or blocking the pass. The 1/3 format also travels: fits inside a standard three-deep pan rack, stacks safely without fouling adjacent pans, and doesn't require specialist storage.

Questions, answered straight

Both are the same material and thickness, so cooking time is identical. The difference is batch size: one tray cooks two portions, three trays cook six. If your oven space allows, you can run multiple 1/3 trays for faster throughput.

No. The 1/3 tray is sized for a 1/3 pan, and it won't sit level in a deeper 2/3 cavity. Keep trays matched to their pan size.

Depends on your service. If you're cooking to order (one or two omelettes every few minutes), yes. If you're pre-prepping fifty portions, no — you'd need multiple trays running. Plan for batch size, not individual capacity.

Fill the mould to the rim for a consistent finished portion. Underfilling produces a thin item that cooks fast and may dry out; overfilling spills over the edge. Use a portion ladle or the mould as your measurement guide.

The 1/3 multibaker was designed for combi-oven use, not water-bath cooking. For bain marie service, use a standard perforated 1/3 pan instead.

Rational's aluminium trays don't require seasoning before first use. Lightly oil the moulds if you prefer (preventing the first batch from sticking), but they'll develop a natural non-stick finish after a few uses. Wipe clean with a soft cloth after each service.
