Why this gastronorm earns its place
This kit pairs one half-size pan (325 × 265 mm) with two quarter-size pans (265 × 162 mm), every pan 150 mm deep, each with its own stainless steel lid. The half pan takes your main item — a roast joint, a tray of lasagne, a batch of rice — while the two quarters sit alongside for sauces, vegetables, or breakfast sides. Three pans, three lids, drop straight into a standard two-rail bain marie: the half pan spans the rails one way, the two quarters sit side-by-side the other way. No adaptor bar, no gaps.
Vogue stamps these from 18/10 stainless steel with reinforced corners and overhanging rims that lock onto the rails. The lids have a central lug for one-finger lifting and stack flat when you're loading the dishwasher or the fridge. At 150 mm deep, the half pan holds roughly 9 litres and each quarter holds around 4 litres — 17 litres total of covered, organised capacity. They take the thermal cycle from combi oven to blast chiller to freezer to bain marie without changing containers, which cuts handling, reduces contamination risk and saves wash-up time.
The 1/2 + 2×1/4 combination is a workhorse layout. Run a carvery with meat in the half, gravy and mint sauce in the quarters. Do breakfast with scrambled egg in the half, beans and tomatoes in the quarters. Switch to a la carte with a braised dish in the half, two component sauces in the quarters. The pans are dishwasher-safe, freezer-safe, and built to take the daily knocks of a commercial kitchen. Simple, flexible, and the right fit for Buffalo bain maries.
