Vogue's polycarbonate gastronorm containers have become a kitchen staple for good reason: the material is virtually unbreakable, stays cool to the touch even when the contents are piping hot, and shrugs off the daily abuse of a commercial kitchen without chipping or cracking. The temperature range is genuinely impressive: –40 °C to 100 °C means the same pan moves from blast freezer to combi oven to bain-marie without a second thought.
