THE WORKING VIEW

Why this platter earns its place

The Galerie range in onyx black is designed for plating that matters. Vitrified fine china resists the marking and staining that dulls raw or semi-vitrified surfaces, keeping the black finish sharp across service. At 1/3 gastronorm size, this platter is a single-plate platform—ideal for composed plating where every element needs to be positioned with care.

Sixty-five millimetres deep allows protein, vegetables, and sauce to coexist without crowding. The glaze sheds fruit acids, reduction stains, and wine- or spirit-based sauces without discolouration—a real asset when plating high-acid dishes or dishes requiring bold sauce work. It fits flush within 1/3 GN counter and bain marie spaces, so your plating station doesn't need reshaping.

BEFORE YOU BUY

Questions, answered straight

Yes. A single composed plate fits comfortably on a 1/3 platter, with room for generous sauce pours and carefully positioned garnish. It's the standard size for à la carte and composed-plate services.

Absolutely. Sixty-five millimetres gives room for layered vegetables, protein stacking, and fluid sauces without components shifting during the plate-up or transport to table.

If your counter is set up for 1/3 GN pans or inserts, yes—the platter sits flush in standard spaces, so no repositioning or adaptation needed.

Vitrified porcelain resists staining, but acidic or wine-based reductions can discolour if left sitting. Rinse soon after service, and the glaze will remain sharp. A quick inspection under hot water after each service keeps the finish looking new.

The range includes 1/1, 1/2, 1/3, and 2/4 sizes. Stack only with soft cloth or felt liners between pieces to protect the glaze. Stacking different sizes is fine if protected; same-size stacks are more stable.

Yes. Vitrified porcelain is engineered for commercial kitchen speeds. With regular inspection for chips and careful handling, a 1/3 platter outlasts less-vitrified alternatives by years. It's an investment in consistency and presentation.
