Why this wok earns its place
The London Round Base Wok 356mm is built for the sort of cooking that moves quickly and needs a pan with a bit of give. The manufacturer describes the wok as one of the most versatile pans there is, and says it is used most for stir frying, with shallow frying, deep frying and steaming also part of the picture.
It is made from mild steel with a coated silver finish, so it has a straightforward commercial feel rather than anything decorative or delicate. The wok measures 355 mm in diameter, with a 540 mm overall length and a gross weight of 1.4 kg.
The long single handle is useful in practice because it lets you steady the wok with one hand while you work with the other. That makes it easier to keep things moving when you are tossing ingredients, adding liquid or finishing a dish quickly.
