Why this saucepan earns its place
This is the small pot that shows up in every professional kitchen once you've actually cooked for a living. 1.5 litres sits perfectly between "too big to control the temperature on a sauce" and "not enough to plate four people". It's the pot for the final reductions, the hollandaise sitting over a bain-marie, the last sauce that needs to stay warm but not split. At 16cm diameter, it fits on any range without claiming the best burner, and at 720g it's light enough to move one-handed even when full and hot.
Stainless steel with an aluminium core again — the same even heat distribution and temperature responsiveness as the larger 20cm version, just scaled down. That matters here; a thin-walled pot would struggle with the precise heat control finishing sauces demand. The lid is useful for holding heat, and the whole thing is dishwasher-safe once service ends. No fuss, no hand-washing, no hoarding shelf space in a small kitchen because the pot is too precious to clean like equipment.
Many kitchens end up with two of these — one on the sauce station, one in rotation through the dishwasher.
