THE WORKING VIEW

Why this casserole & stew pan earns its place

The 28cm LAVA casserole is the sweet spot for serious kitchens—large enough for full-team braises and stock production, compact enough to rotate through a pass without taking over the counter. At 8kg, it has the thermal mass that cooks rely on: perfect, even heat distribution that electric pans simply can't replicate, whether you're browning six portions of beef or reducing a sauce to intensity.

Cast iron's reputation is built on performance. It performs. Take it from gas flame to 200°C oven without hesitation, then back to the stovetop—the thermal shock that would crack ceramics rolls off cast iron. Meat browns properly because the pan holds its heat. Sauces simmer, they don't boil. The seasoning layer that builds over months and years becomes non-stick without chemicals. After service, a quick wipe and you're done. No soaking, no harsh scrubbing, no degradation.

The blue enamel finish gives it a professional look that works in open kitchen settings, and it's robust enough for the pass—it's designed to take knocks and still perform. This is the casserole you buy once and use for a decade.

BEFORE YOU BUY

Questions, answered straight

At 8kg, you'll want a two-handed grip when moving it hot, but it's still single-person manageable on the hob. The weight is the feature—it stabilises your cooking and keeps temperature steady.

No. Enamel is inert. You season the cooking surface underneath as normal. The enamel is purely aesthetic and protective on the sides and bottom.

At 28cm diameter and a height of 135mm, it holds substantial volume for stocks, braises, and sauces. Exact liquid capacity depends on fill height, but it's spacious for batch work.

Cast iron is oven-safe to the limit of your kitchen—200°C is the professional standard for braising and it'll handle that all day. Far higher temperatures (above 300°C) can affect enamel, but that's not catering-kitchen work.

Properly used and dried between services, cast iron casseroles are 20+ year investments. The seasoning improves with time. Many kitchens still use vintage Le Creuset and Lodge pieces from decades ago.
