Why this ramekin earns its place
Matfer Bourgeat's Exopan ramekins are shallow steel vessels, 40 mm deep, designed for tart and quiche service. Steel conducts heat faster than ceramic, so a hot filling stays hotter on the plate longer—valuable when mise en place runs cold.
The 90 mm width seats comfortably on a charger plate and the shallow profile suits finished desserts, savoury tarts, or individually plated sides. Steel is lighter and thinner than stoneware, so ramekins nest tightly in a prep drawer and travel well on an event van. Two ramekins per pack is lean but matches the typical plating rhythm of a small kitchen.
