Use refined vegetable, sunflower, or rapeseed oil with a smoke point of 210°C+. Avoid animal fats and recycled oils. Bulk purchase from catering suppliers (£40–£60 per 16 L drum) is standard; supermarket oil is more expensive and often lower smoke point. Keep oil temperature 160–175°C during service. Never exceed the smoke point (180°C for basic vegetable oil, 220°C for refined blends) — exceeding it creates acrolein (carcinogenic), contaminates food, and degrades oil rapidly.
