The wall shelf earns its keep in the working zone — 1,400–1,800mm above floor level, where a chef reaches without stretching. It adds productivity, not volume. Racking adds the volume: a 4-tier tower on a 610×610mm footprint gives roughly 1.5 square metres of shelf area on a third of a square metre of floor, and runs of 1220mm wire bays will swallow a weekly dry goods delivery for a 60-cover restaurant with room for first-in, first-out rotation.

The coldroom argument for wire is thermodynamic. A walk-in circulates evaporator air across the product; solid shelves loaded edge-to-edge create dead zones where the middle of a stack sits 2–3°C warmer than the thermostat reports. Under the Food Safety (Temperature Control) Regulations 1995, chilled food must be held at 8°C or below — and that’s exactly where it fails silently. The rule that holds across every zone: if it gets wet, cold, or chemically cleaned, chrome is out. Dry store and cellar — chrome wire lasts a decade. Walk-in chiller or freezer — coated wire or stainless, no exceptions. Prep and wash-up walls — 304 stainless, the only finish that shrugs off daily sanitiser. Decision 4: Load Ratings and Safe Loading
Every shelving failure we’ve seen in 30+ years of trade supply comes down to point loads treated as distributed loads, heavy stock on top tiers, or wall fixings never rated for the job. All three are avoidable with five minutes of arithmetic.
Manufacturers quote shelf capacity as a UDL — Uniformly Distributed Load: weight spread evenly across the whole surface. Real kitchens don’t load like that. A full 50-litre stockpot concentrates 55 kg onto a 400mm circle, stressing the centre span far harder than the same weight spread out. The working rule: halve the quoted UDL when the load is concentrated. A tier rated at 200 kg UDL is roughly 100 kg of real-world clustered stock — a very different number when you’re planning where the bulk oils live.
Height logic matters as much as weight logic. HSE manual handling guidance is blunt: lifting capacity drops sharply below knuckle height or above shoulder height. A 25 kg flour sack pulled down from above the shoulders is how kitchens generate back injuries and dropped-load accidents. Heavy stock on the middle tiers, light bulky stock up top, stable sealed stock on the awkward bottom lift.
Decision 5: The 150mm Rule and Hygiene Layout
Ask any Environmental Health Officer what they check in the first sixty seconds of a dry store inspection: the floor line. Stock on the floor means the floor can’t be cleaned and pests can harbour unseen. The 150mm figure isn’t quoted verbatim in legislation — what retained Regulation (EC) 852/2004 requires is that premises be kept clean, floors be cleanable, and food be protected from contamination. 150mm bottom-tier clearance is the industry-standard interpretation that makes those requirements achievable, and it’s the benchmark EHOs and auditors apply. Adjustable-foot racking makes compliance free: set the bottom tier one position up and the clearance is built in.
Not “temporarily”, not “just until lunch”. Build enough shelf capacity that a full weekly delivery decants straight onto racking and the floor stays permanently clear.
Enough to mop, scrub, and visually inspect beneath every bay. In wash-down areas, more clearance is better — 300mm lets a compact floor scrubber pass under.
A small gap stops trapped moisture, lets air circulate, and makes wall inspection possible without unloading the bay.
Cooked and ready-to-eat food on upper tiers; raw meat, poultry, and fish on the lowest tiers in lidded containers. Drips can only fall downwards.
Cleaning chemicals never share a bay with food or packaging. A separate rack in a separate area — ideally lockable — is the standard an EHO expects and the layout your COSHH assessment assumes.
Fixed tier labelling turns stock rotation from a training point into a physical system. Date-mark decanted goods and work new deliveries to the back of the shelf.
Decision 6: Planning the Layout Zone by Zone
Shelving is bought by the shelf but planned by the room. Walk each zone with a tape measure and ask: what’s stored here, how heavy, how wet or cold, and what has to pass through the aisle?
